Homecoming Cupcakes =]

Friday October 15th we made over 80 cupcakes, chocolate and vanilla. The vanilla cupcakes had a caramel buttercream frosting and the chocolate cupcakes had a chocolate buttercream frosting. We sold between 60-70 cupcakes each cupcake was $1.50 each or 3 for $4. Each cupcake was topped with a husky pawprint made out of blue and white fondant to show our school colors for Homecoming week!

I think we did really well on this one and had a lot of fun with little to no chaos or drama.

Reflecting On Our Staff Lunches!

I think that this past week's staff lunch was very successful, it was our least stressful and everyone was equally prepared. The Chiken Skewers that Kelsey and I made were very tastey and I'm sure the tofu ones were just as good! The couscous was really flavorful and of course our honey walnut cupcake topped with honey buttercream a baklava treat and a fondant bubble bee just made the lunch even better!
I don't think we could've done any more better than we did this last week. We really worked as a team and everyone got along really well!

Here's the recipe for the Chicken Skewers
1 skinless, bonless chicken breast per person

Marinade:
1 tsp black pepper
1 tsp ground cumin
1 tsp chopped garlic
1 tbsp sugar
1 tbsp vegetable oil
1 tbsp soy sauce
1 tbsp lemon juice
1 tsp fish sauce

16 bamboo skewers
Cut the chicken breasts into into cubes and place them in a work bowl. Add all the marinating ingredients (dry ingredients first and then liquids) gently tossed until well mixed. Let it marinate in the fridge for atleast 2 hours and up to 24 hours.

When ready to cook, stir the chicken in the marinade and place on a skewer. Baste the chicken with oil (optional) and grill on a barbeque or under the broiler of an indoor oven. Cook for not much more than 2 minutes each side, turning often to prevent unnecessary burning, and baste again with oil (optional). They are done when they have turned golden brown and crispy along the edges.
